VICTORY is a natural Yemeni and the rarest coffee in Drop 003.

It's bright and complex with orange, cocoa and dried fruit notes. Yemen is where commercial coffee cultivation began centuries ago, and Victory is a direct continuation of that ancient tradition.

The coffee is produced by small holders in Su’ut, high up at 2,450 metres above sea level in the East Haraz Mountains. It’s a Jaddi varietal, a Yemeni heirloom cultivated over centuries along terraces in the harsh Yemeni mountains.

Natural processing is the tradition here: cherries are dried whole in the intense mountain sun, concentrating the cherry’s sugars into a bright and complex cup. Once dried, the cherries are hulled to remove the dried fruit and parchment, leaving the green coffee ready for roasting.
